Quaternized chitosan (chitosan quaternary ammonium salt) is not only directly soluble in water but also exhibitsenhanced antibacterial activity compared to chitosan. It can be sprayed directly onto the surface of fruits and flowers for antimicrobial preservation and extended shelf life. Additionally, it can form high-performance ediblecomposite films or coating layers through intermolecular hydrogen bonding, ionic bonding, physical entanglement, etc., with various substances such as starch, pectin, gelatin, and essential oils, thereby expanding its applications in food packaging.
Due to its potent bactericidal activity against Escherichia coli, Salmonella, Staphylococcus aureus, and aquaticVibrio species, as well as its cationic property that enables adsorption of mold spores, endotoxins, and otherharmful substances (synergistic detoxification), quaternized chitosan can also serve as an antibiotic alternative infeed additives for antibiotic-free farms, high-density aquaculture, and as an antimicrobial additive in starter feeds for piglets and chicks.
